Main Course Recipe: Gooey Cinnamon Rolls with Cream Cheese Icing
A serving of the original recipe has 250 calories and 15g fat! I cut the calories in half by using fat-free cream cheese, reduced-fat crescent roll dough, brown sugar & no-calorie sweetener!
Main Course: Salmon, Sweet Potatoes and Spinach
Ingredients
2 portion-size yams
1 lemon, halved, divided
2 portions salmon fillet (about 12 oz.)
2 tsp. olive oil
8 oz. fresh mushrooms, sliced
1 bag (5 oz.) baby spinach leaves
Directions
Preheat oven to 450 F. Place yams on a baking sheet and bake until tender, about 45 minutes. After yams have baked for about 25 minutes, preheat grill to medium. Squeeze half the lemon over salmon fillets and brush with olive oil. Place salmon on grill and cook until opaque throughout, about 5 minutes each side. While salmon is cooking, lightly coat a large skillet with butter-flavored cooking spray and place over medium-high heat. Add mushrooms and saute for 3 minutes. Add spinach and saute until wilted, about 3 more minutes. Place a portion of salmon on a bed of spinach along with a portion-size yam on each plate. Squeeze remaining lemon over salmon and spinach. Serve and enjoy!

A very intimate setting where you can get up close and intimate with us. Gene, also has performed and recorded with many of the greats, including Benny Goodman, Buddy Rich, Wayne Shorter, Hubert Laws, Paul Desmond, Tony Bennett, Lena Horne and Nancy Wilson.
A prolific studio musician, he performed for two years when Johnny Carson hosted the Tonight Show. He's worked with composers and arrangers such as Lalo Schifrin and Michel LeGrand, performed with the Metropolitan Opera Orchestra.
Gene is a teacher at Eastman School of Music and William Patterson University. A New York City native he graduated from the University of Notre Dame with a degree in Architecture.

Recording has been a huge part of my life most of my life.
While researching for radio, I've run across many songs that exist in my own repertoire. Songs that I visited as a young singer and songs that I've "re-purposed" for various applications.
I went to my own recorded archives and found my High School talent show performance of James Taylor's "Blossom" and Joni Mitchell's "Circle Game" and a re-write of Harold Arlen's classic "If I Only Had A Brain" (re interpreted and performed as a conversation between a man and a woman), Mark Gungor on piano.
I thought it'd be fun to post them for you to hear!

I've been performing in San Diego CA area the last two days.
When I travel, I try my best to get out of the hotel and walk... experience "God's Green Earth".
An absolute beautiful day in California, 75 degrees, sun shining....you get the picture.
With my trusty phone in hand, (for pictures, that is), I set out.
I walked for a couple of hours and took these pictures to share with you.
Sun, beach, birds and flowering knolls, All I could think was, "o.k. Californians, I get it!"
So taken with the day I had to share my awe with someone, so I hailed a gentleman walking on the other side of the street and said "beautiful day!" he replied, "Heaven on a stick!"
I concur.




SALSA-FIED TUNA SNACK RECIPE

Ingredients
1 (2.6-ounce) packet albacore tuna packed in water, drained
3 tablespoons prepared salsa
2 lightly salted rice cakes

Directions
Empty drained tuna into a bowl. Add the salsa and mix well. Evenly top rice cakes with the tuna-salsa mixture. Enjoy!
PER SERVING (entire snack): 170 calories, 2g fat, 626mg sodium, 17g carbs, 0.75g fiber, 1.5g sugars, 20.5g protein

We were going to go to Birdland tonight to see John Pizzarelli, (who is a dear friend of Gene's) but they're sold out.
I called the manager at Feinstein's and he invited us to see "Little Anthony and The Imperials" tonight.
Never a dull moment or lack of things to see and do.
We'll be back at Feinstein's August 17th and 18th of August. Make your plans to come to the "Big Apple" now!
